This is a low fat, low carb easy to make recipe. I would also like to add... economical. You can get a whole chicken for about 6 bucks and feed a family of 6. Do the math. Also, keep the bones and make a nice chicken broth. Chicken is such a cost effective means to get lean protein the will sustain you.

 


1 Tbsp. molasses
1-1/2 tsp. Fructevia, Steviva Brand Stevia Blend or 1 tiny scoop of stevia extract.
1-1/2 tsp. garlic powder
1-1/2 tsp. salt
3/4 tsp. pepper
3/4 tsp. paprika (smoked paprika if you have it)
1/2 tsp. dry mustard
1/4 tsp. cayenne pepper
1/4 tsp dried thyme
2 tsp. olive oil
1 (4 or 5 lb) whole chicken

 

Directions

Pre-heat oven to 375 degrees
Mix all dry ingredients together.
Wash & pat dry the chicken with a paper towel.
Brush the chicken with olive oil, and rub the dry rub all over the chicken. If there's extra rub, pour remaining rub inside the chicken's cavity.
Bake for 45 minutes, or until a thermometer reads 165 degrees in the breast.
Transfer chicken to a cutting board and let rest for 10 minutes before carving.
