Ingredients
3 cups fresh tomatoes – cut in ½” cubes (mix it up with a variety of different types of tomatoes. cherry, heirloom etc.)
1 cup sliced buffalo mozzarella (optional)
¼ cup scallions or green onions– sliced
2 tablespoon olive oil
1 tablespoon balsamic or apple vinegar
1 tablespoon water
1 teaspoon dried or better yet fresh basil
1/8 teaspoon dried or better yet fresh oregano
½ teaspoon Fructevia, Steviva Blend or or a very very small dash of Steviva Brand Stevia Powder
salt and pepper to taste
Directions
Combine veggies.
In small bowl mix rest of ingredients.
Add to veggies.
Toss gently till spices are evenly spread thru out.
Add slice buffalo mozzarella.
Chill overnight.
