Ingredients

2 medium bananas, sliced thin
1 tbsp lemon juice
2/3 cup whole wheat flour
1/2 tsp baking powder
pinch sea salt
1/2 cup cold butter
1 cup oats
1/2 cup steviva blend
1 lagre egg, slightly beaten

Directions

Preheat oven to 350 degrees. Lightly grease a 8x8" baking dish.
Peel and slice bananas thinly. Cover with a mixture of lemon juice and cold water.
Combine flour, baking powder and salt in a large bowl. Use a pastry blender to cut butter into flour until mixture looks like fine crumbs.
Stir in oats and sugar. Mix in the eggs and blend until the mixture becomes a stiff dough.
Put half into baking pan. Press down firmly. Add drained sliced bananas in a thin layer on top. Top with remaining dough mixture.
Bake for approx 30 minutes or until golden brown.
Cool completely then cut into bars.
Makes 16.
