So, what is Limoncello? Limoncello is a popular Italian digestiv, or after-dinner drink, usually served ice cold from the freezer in small ceramic cups. This stuff is delicious but, loaded with sugar. We are going to show you how to make it with a fraction of the sugar and get this... only 70 calories and 3.6 carbs! With all that we have kept all the flavor that makes Limoncello so popular. Speaking of popular. Put your Limoncello in decorative bottles and give it as gifts. Your friends and family will love it.

10 lemons
1 (750-ml) bottle vodka
3 1/2 cups water
1 cup Fructevia
, Steviva Brand Stevia Blend of 1/8 teaspoon of Stevia Powder



1.) Use a vegetable peeler and remove the peel from the lemons in long strips. You can use the actual lemons for something else like lemonade. Using a paring knife, trim away as much of the the white pith as you can from the lemon peels. Put the lemon peels in a two quart pitcher. Pour the vodka over the peels and cover with plastic wrap. Steep the lemon peels in the vodka for four days at room temperature.

2.) After the lemon peels have had time to steep, put the water and Fructevia, Steviva Brand Stevia Blend of 1/8 teaspoon of Stevia Powder in a large saucepan over medium heat until the sweetener dissolves. It shouldn’t take more than five minutes or so. Let the mixture cool completely. Pour the resulting syrup over the vodka mixture. Cover and let stand at room temperature overnight. Strain the mixture through a mesh strainer. Discard the peels. Transfer the Limoncello to bottles. Seal the bottles and refrigerate until cold. Serve ice cold.
