Ingredients:
1 1/4 cup cooked black beans drained and rinsed (1 - 15 oz. can)
4 eggs
1/2 cup Fructevia, Steviva Blend or a tiny dash to taste of Stevia
4 tablespoons unsweetened cocoa powder
1 teaspoons baking powder
2 tablespoons coconut oil or butter
1 tablespoon vanilla extract
1/2 teaspoon baking soda
1/4 cup ricotta cheese or cream cheese
1/4 cup chopped walnuts or pecans (optional)
Directions
Preheat oven to 350 degrees.
Mix all ingredients except for the nuts in a food processor or blender- blend very, very well.
Pour into an 8x8 greased baking pan sprayed with cooking spray or oiled with canola or olive oil.
Spread chopped nuts across the top.
Bake for 30-40 minutes. Until toothpick pulls out clean.
Let cool and serve.
