Best Banana Bread

Ingredients
1/2 cup applesauce (or use 1/2 cup canola oil)
1/2 cup Fructevia
2 eggs
3 or 4 large mashed ripe bananas (about 1 1/2 - 2 cups)
1/4 cup sour cream (optional- increases moistness)
1 tsp vanilla
1 tsp baking soda
2 cups Whole Wheat flour
1 tsp cinnamon (if desired)
1/2 cup nuts (if desired)
Directions
Mix applesauce, fructevia and eggs together well. Add the mashed bananas, sour cream and vanilla to mixture and blend together. Stir in baking soda and wheat flour. Add nuts and/or cinnamon if desired. (Cinnamon has shown to helps blood sugar levels.)
Pour batter into greased pans: 1 large loaf pan or will make 2 small loaves.
Bake at 350 degrees for 45 - 60 minutes. Do NOT over bake.
Use knife or toothpick test to make sure it's done.
Traditional banana bread has a glycemic index of under 50. This loaf has no sugar, uses whole grain wheat four and cinnamon to reduce insulin levels.
(Personal note: I use the sour cream and cinnamon, I don't like nuts)
